Chef Honors Johnny Carson

By JULIETTE ROSSANT The memory of TV's greatest star Johnny Carson was honored last night by Executive Chef Anthony Tuttle at the Renaissance Esmeralda Resort & Spa during the annual Bob Hope Chrysler Classic Ball in Palm Desert, CA. Chef Tuttle started with shrimp bellisimo [sic], a proscuitto wrapped shrimp with artichoke and fresh thyme. The main course was veal Forestier medallions topped with mushrooms in a port wine demi-glace and accompanied by wild mushroom bread pudding and spring roasted vegetables. Desserts included bittersweet chocolate truffle cake with mocha Anglaise sauce, a margherita mousse with citrus sauce, a miniature praline cheese cakes with cardamom syrup, and a platter of strawberries with sweet snow, toasted almond clusters, California lemon galette, tiramisu truffle and Medjool dates made the indulgences complete. Celebrities included Yogi Berra and wife Carmen, actor and announcer Dennis Haysbert, Penelope and NBC Business Team reporter Joe Kernen, former Boston Red Sox pitcher Derek Lowe, aviation designer Burt Rutan (Spaceship One & Voyager) with wife Tonya, New Hampshire Sen. and Mrs. Judd Gregg, and U.S. Rep.
