Sara Moulton on Anne-Sophie Pic

Super Chef asked prominent women chefs around the country for their reaction to the recent news that Chef Anne-Sophie Pic had received a third star from Michelin. She is the first woman chef to win a third star in 56 years (see previous article).

Sara Moulton told Super Chef:

As bad as it has been in this country for women to break into the restaurant world, it is really impossible to do do in France. I experienced the male chauvinism when I worked in a 1-star restaurant there in the late 70s and again 5 years ago when we taped a show with a woman chef in Paris (who had had a hard time).

I think the reason there have not been more women chefs in New York City for all these years is because the French chefs had a stanglehold on all the top restaurants and did not want to hire women either in the back or the front of the house.

I applied to a 3 star restaurant when I first came to town in 1981 and although the French chef owner was tres charmant and apologetic that he had no opening, I was told afterwords by a man who had worked with him that the chef would rather close his restaurant than hire a woman!
