Allen Susser: Chef For A Day

It's called a stage. The stagier might have to pay for the privilege of working or just get board – but what they do get is plenty of knowledge that can open their mind and improve their skills. Chef Allen Susser is definitely a believer in the benefits of stages. Alen has gone one step further. He has started a Chef for a Day program. For a fee, students spend 4 ½ hours in the kitchens of Miami restaurant, Chef Allen's becoming part of the kitchen crew. They chop, dice, sauté, and learn all about organization, execution, and delivery of a meal. Super Chef was intrigued by the fact that anyone, no matter what their skill level, can become Chef for a Day. Allen told Super Chef: We have started the program and has been going great. We do get all types of people coming in: doctors, lawyers, teachers, computer geeks, and wine freaks, kids who idolize the Food Network chefs, husbands, wives, grandmothers... and gourmands. This is a techniques exposure at all levels and sensory tasting throughout the day.Super Chef wanted to know what the stagier learn: Depending on experience - we consider the level of task or over the shoulder direction - needed - a novice take away a different set of skills than an amateur chef or home cook. Everyone learns organizations skills that help in every aspect of cooking and thinking about food.What about eating a meal? Though they are tasting throughout the day - many have finished their class with invited guests in the dinning room.Work up an appetite, and enjoy the fruits of your - and the kitchen crew's – labor – sounds like a perfect Foodie gift.
